Mexican Gelatin:A Frequent Presence At Children’s Parties

Mexican gelatin(also known as mosaic jelly) is a kind of dessert that accompanied the childhood of Mexican children. It’s a regular appearance in children's birthday parties and in Mexico. Mexican gelatin is made of different flavors of gelatin, similar to a multi-color mosaic. It’s a festive, popular and welcoming snack in Mexican culture.

What is Mexican Gelatin?

This type of jelly is made with various flavors of gelatin powder. It contains a variety of colors and flavors, such as strawberry (red), orange (orange), pineapple (yellow), blueberry (blue), grape (purple), etc. The procedure of making it is simply, refrigerate the gelatin mix until it gels firmly and cut them into cubes. Then add condensed milk to enrich the taste and color. It’s hard to resist a colorful snack with rich flavor and tasteful.

1. Make flavored gelatin mix

Get a bag of flavored gelatin powder and follow the instructions on the package to make flavored gelatin. Separate different flavored gelatins with different containers and cover them with plastic wrap, then put all in the refrigerator for the night.

Cut each gelatin into 2 cm squares the next day, then put them back in the refrigerator.

2. Make white gelatin (milk gelatin)

Mix a bowl of boiled milk and regular milk, add sugar powder and vanilla extract, start stirring till everything’s evenly blended. Take a cup of this milk mixture and heat it in a pot with low heat. Add unflavored gelatin, stir till it’s fully melted. There you go with a cup of milk gelatin.

3. Molding

Fill the mold with flavored gelatin cubes until it’s half full.

Pour in some milk mixture made previously, but don't fill it up. Then add more gelatin cubes to fill it up and shake the cup slightly so the milk mixture would drip down and solidify. Repeat this procedure until the mold is full.

4. Refrigerate till it’s made

Cover the mold with plastic wrap and refrigerate for 3 to 4 hours. The delicious and unique Mexican gelatin is made!

Tips for Making Mexican Gelatin

1. Use a little less water than what is recommended by the packaging instructions when making the gelatin so it will be stronger and easier to cut.

2. Put the flavored gelatin into refrigerator till it gels properly, preferably overnight.

3. There’s no limitation on flavor or color for this type of jelly.

4. Enhance the flavor of this Mexican jelly with a little condensed milk or caramel, or sprinkle whipped cream on top it.
